>Dried Fig and Lemon Spelt Scones

Last week my manager brought in a huge bag of lemons from his tree – I happily took home an armful of them. They are beautifully vibrant and deliciously aromatic, almost not even real looking. I wanted to make a special treat for my team and thought of making lemon bars, but turned instead to trusty Kim Boyce’s Good to the Grain. When I brought them in the next day it turned out that my coworker and I were thinking on the same wavelength; she had made lemon bars for the us. I had an extra hop in my step the rest of the day.
These scones were amazing – fluffy and crumbly at the same time. I found that mine spread a little more while baking than I would have liked but I think it’s because I substituted some of the heavy cream for almond milk because I didn’t have enough. Still they were as tasty as could be, and I couldn’t stop eating them. There was still one left when I got back to the office after the weekend and I ate it anyways – dried out and all.
